Fudgy Brownies

Ingredients

  • 200g dark chocolate, chopped
  • 170g unsalted butter
  • 300g granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 100g all-purpose flour
  • 30g cocoa powder
  • 1/2 tsp salt
  • 100g chocolate chips (optional)

Method

  1. Melt chocolate and butter in double boiler until smooth.
  2. Whisk in sugar until combined, cool slightly.
  3. Beat in eggs one at a time, then vanilla.
  4. Fold in flour, cocoa, and salt until just combined.
  5. Add chocolate chips if using.
  6. Bake at 350°F for 25-30 minutes until toothpick has few moist crumbs.
  7. Cool completely before cutting.

Texture control

  • For fudgier brownies: slightly underbake
  • For cakier texture: add extra egg and bake longer
  • Don't overmix once flour is added

Use good quality chocolate (60-70% cacao) for best flavor. The chocolate is the star here.
