Cauliflower Crust Pizza

Ingredients
- 1 large head cauliflower (about 800g)
- 1 large egg
- 100g mozzarella cheese, grated
- 30g Parmesan cheese, grated
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Method
Prepare cauliflower
- Remove leaves and core, cut into florets.
- Pulse in food processor until rice-like texture.
- Microwave 8 minutes or steam until tender.
- Cool completely, then squeeze in clean kitchen towel to remove excess moisture.
Make crust
- Preheat oven to 425°F.
- Mix cauliflower with egg, cheeses, and seasonings.
- Press mixture into 12-inch circle on parchment-lined baking sheet.
- Bake 15-20 minutes until golden and firm.
Top and finish
- Remove from oven, add sauce and toppings.
- Return to oven 10-15 minutes until cheese melts.
