Cauliflower Crust Pizza

This surprisingly sturdy crust delivers pizza satisfaction while keeping carbs minimal.

Ingredients

  • 1 large head cauliflower (about 800g)
  • 1 large egg
  • 100g mozzarella cheese, grated
  • 30g Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method

Prepare cauliflower

  1. Remove leaves and core, cut into florets.
  2. Pulse in food processor until rice-like texture.
  3. Microwave 8 minutes or steam until tender.
  4. Cool completely, then squeeze in clean kitchen towel to remove excess moisture.

Make crust

  1. Preheat oven to 425°F.
  2. Mix cauliflower with egg, cheeses, and seasonings.
  3. Press mixture into 12-inch circle on parchment-lined baking sheet.
  4. Bake 15-20 minutes until golden and firm.

Top and finish

  1. Remove from oven, add sauce and toppings.
  2. Return to oven 10-15 minutes until cheese melts.

Removing moisture from cauliflower is essential. Squeeze hard in towel - you should extract significant liquid.

Topping suggestions

Keep toppings moderate to prevent sogginess. Pre-cook watery vegetables like mushrooms and peppers.
