Classic Chicken Noodle Soup

The ultimate comfort food with tender chicken, vegetables, and noodles in rich, flavorful broth.

Ingredients

  • 1 whole chicken (1.5kg) or 1kg chicken pieces
  • 2L water
  • 2 bay leaves
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, diced
  • 3 garlic cloves, minced
  • 200g egg noodles
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method

Make broth

  1. Simmer chicken in water with bay leaves for 1 hour.
  2. Remove chicken, cool and shred meat.
  3. Strain broth, return to pot.

Build soup

  1. Sauté vegetables in oil until tender, about 8 minutes.
  2. Add to broth with shredded chicken.
  3. Simmer 15 minutes to meld flavors.
  4. Cook noodles separately, add just before serving.
  5. Season with salt, pepper, and fresh parsley.

Make-ahead tip

Store noodles separately and add when reheating to prevent mushy texture.
