Classic Chicken Noodle Soup

Ingredients
- 1 whole chicken (1.5kg) or 1kg chicken pieces
- 2L water
- 2 bay leaves
- 1 large onion, diced
- 3 carrots, sliced
- 3 celery stalks, diced
- 3 garlic cloves, minced
- 200g egg noodles
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Method
Make broth
- Simmer chicken in water with bay leaves for 1 hour.
- Remove chicken, cool and shred meat.
- Strain broth, return to pot.
Build soup
- Sauté vegetables in oil until tender, about 8 minutes.
- Add to broth with shredded chicken.
- Simmer 15 minutes to meld flavors.
- Cook noodles separately, add just before serving.
- Season with salt, pepper, and fresh parsley.
