Vegan Banana Bread
This plant-based version achieves the same moist, tender texture as traditional banana bread.
Ingredients
- 4 very ripe bananas (450g mashed)
- 80ml neutral oil or melted coconut oil
- 150g brown sugar
- 60ml plant milk
- 1 tsp vanilla extract
- 250g all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 100g chopped walnuts (optional)
Method
Prepare wet ingredients
- Preheat oven to 350°F, grease 9x5 loaf pan.
- Mash bananas until mostly smooth.
- Mix in oil, sugar, plant milk, and vanilla.
Combine and bake
- Whisk flour, baking soda, salt, and cinnamon.
- Fold dry ingredients into banana mixture until just combined.
- Add nuts if using.
- Pour into prepared pan.
- Bake 55-65 minutes until toothpick comes out with few moist crumbs.
- Cool in pan 10 minutes before turning out.
