Curry Powder
Curry powder is a Western adaptation of traditional Indian spice blends, designed to bring the complex flavors of Indian cuisine to home kitchens. While purists might argue that authentic Indian cooking uses whole spices toasted and ground fresh, this blend offers convenience without sacrificing depth.
The Blend
Base Spices:
- 2 tablespoons ground turmeric (provides the signature golden color and earthy base)
- 2 tablespoons ground cumin (adds warm, nutty undertones)
- 2 tablespoons ground coriander (brings citrusy, floral notes)
Heat and Aroma:
- 1 tablespoon ground chili powder (adjust based on your heat preference)
- 1 tablespoon ground ginger (adds warmth and digestive benefits)
- 1 teaspoon ground black pepper (enhances other spices)
Optional Enhancements:
- 1/2 teaspoon ground cardamom (for floral complexity)
- 1/2 teaspoon ground cinnamon (adds subtle sweetness)
- 1/4 teaspoon ground cloves (use sparingly - very potent)
Technique Notes
The key to a balanced curry powder is understanding that turmeric should be the dominant note, but not overwhelming. Many commercial blends are too heavy on turmeric, resulting in a one-dimensional, slightly bitter flavor profile.
When blending, start with the base spices and add the heat elements gradually. The ginger should be fresh-dried if possible, as pre-ground ginger often loses its aromatic qualities quickly.
Storage and Freshness
Store in an airtight container away from heat and light. Ground spices lose potency faster than whole spices, so this blend is best used within 3-4 months. For maximum freshness, consider making smaller batches more frequently.
Usage Variations
Mild Curry: Reduce chili powder to 1/2 tablespoon, add 1/2 tablespoon sweet paprika Hot Curry: Increase chili powder to 2 tablespoons, add 1/2 teaspoon cayenne Sweet Curry: Add 1/2 teaspoon ground fenugreek and increase cinnamon slightly
Beyond Traditional Uses
While curry powder is synonymous with Indian dishes, it's excellent in:
- Roasted vegetables (especially root vegetables)
- Popcorn seasoning
- Deviled eggs
- Potato salad
- Grilled meats (particularly chicken and lamb)
The blend's versatility makes it a kitchen staple that can transform simple ingredients into something extraordinary.
