Technique Notes

The key to a balanced curry powder is understanding that turmeric should be the dominant note, but not overwhelming. Many commercial blends are too heavy on turmeric, resulting in a one-dimensional, slightly bitter flavor profile.

When blending, start with the base spices and add the heat elements gradually. The ginger should be fresh-dried if possible, as pre-ground ginger often loses its aromatic qualities quickly.

Storage and Freshness

Store in an airtight container away from heat and light. Ground spices lose potency faster than whole spices, so this blend is best used within 3-4 months. For maximum freshness, consider making smaller batches more frequently.

Usage Variations

Mild Curry: Reduce chili powder to 1/2 tablespoon, add 1/2 tablespoon sweet paprika Hot Curry: Increase chili powder to 2 tablespoons, add 1/2 teaspoon cayenne Sweet Curry: Add 1/2 teaspoon ground fenugreek and increase cinnamon slightly
